Skip the rolled oats or sugar-laden instant oats and buy the heartier, steel-cut version. For a fast getaway in the morning, use this overnight-soaking trick.

  • 1 cup steel-cut oats
  • 2½ cup water
  • 1 pinch salt

  1. Place 1 cup steel-cut oats, a pinch of salt, and 2-1/2 cups water in a medium saucepan.
  2. Bring to a slight simmer, turn off the heat, and let oats soak covered overnight.
  3. This recipe makes enough oats for about 4 servings. To reheat leftovers, place cooked oatmeal in a saucepan, with a splash or two of water or milk, over medium-low heat until warm.
